LBG is widely used in food pharmaceutical cosmetic textile paper and other industries. In foods it is used in ice cream dairy products sauces and bakery products in pharmaceuticals it is investigated for tablets and drug-delivery systems.
Purpose
Its main purpose is to increase viscosity improve texture stabilize formulations and retain water. In pharmaceutical formulations it can also function as a binder suspending agent bioadhesive and controlled-release polymer.

Locust bean gum (LBG) also called carob gum is a natural galactomannan polysaccharide obtained mainly from the endosperm of Ceratonia siliqua seeds. It has good water-binding thickening stabilizing and gelling properties.
