Application
It is used in food preservation (especially cured meats) pharmaceuticals dyes and corrosion inhibition.
Purpose
Its main purpose is to inhibit bacterial growth (notably preventing botulism) act as a preservative and participate in various chemical reactions as an oxidizing and nitrosating agent.
