Description

Application
It is used in food manufacturing for instant puddings sauces and low-temperature baking due to its rapid dispersion in pharmaceuticals as a binder or disintegrant and in lab settings for viscosity control or microbial media.

Purpose
Its primary purpose is to provide instant thickening and gelling in cold or ambient conditions by disrupting crystalline structure increasing solubility (up to 80% in cold water) and swelling power (often 40 gg) unlike native starch requiring heat.

General Description
Soluble potato starch is a modified form of starch extracted from potatoes processed (often via alcoholic-alkaline treatment or pre-gelatinization) to achieve high cold-water solubility while retaining its white fine powdery or granular appearance with oval-to-spherical granules rich in amylopectin (amylose content 20%).
